You know Cherry, with a risk of being 'clobbered' by those that think she's a goddess, there are a lot of Delia's recipes that don't work!! - I don't understand why she used golden sugar - well obviously to sweeten it, but it would make the egg whites 'sweat' being brown would still have a certain amount of molasses in it - i'll hunt out my recipe (I'm so used to making it i don't know the amounts and post it here on this thread for you a a bit!! Ingredients
250g plain chocolate such as Green and Blacks, pref 70%
3 tbsp water
50g caster sugar
5 eggs, separated
500ml double cream
pinch of salt
Preparation method
1. Put chocolate in double boiler with sugar and water. Heat and stir until very smooth. Take off heat and keep stirring vigorously every 2 minutes until about body temperature.
2. While chocolate is cooling down, separate eggs - crack over 2 separate bowls.
3. Stir yolks into cooling chocolate before it goes granular. Put whites in whisking bowl and into fridge.
4. In separate bowl, whisk cream. Stir body temperature chocolate into whisked cream, gently!
5. Whisk egg whites until peaks form and fold gently into cream and chocolate mixture. Spoon into 8 ramekin dishes. Leave to set in the fridge for at least 2-3 hours
