cut each in half, remove seeds, cut each half into 6 slices. slice a couple of onions and finely chop some tomatoes (or use a tin). heat olive oil in frying pan and add peppers, onions and tomatoes. slowly cook until it's all tender. you can also add crushed or chopped garlic, and i also add some white wine as it's simmering. season with salt and pepper. loosely based on a dish called pepperonata.
They are still whole, but we wanted to make something either to add to cooking, like Harissa, or something that can be frozen, as its not me who loves them!! Thanks for the link though!!
