Por Liver and wild mushroom pate with melba toasts
For main we having a garlic, lime and coriander leaves roasted chicken, with spicy jacket wedges
then Nectarine melbas
If you would like to try the spicy jacket wedges:
Microwave a jacket potato per person until NEARLY cooked . Leave to cool. Halve, halve and halve again until you have eight wedges. Spray or brush a baking sheet with oil and turn the wedges until coated. Sprinkle with spices of your choice - garlic salt and chili, cumin powder, any of the Schwartz mixes are lovely - especially if you match the meat to the spice - eg the lamb shaker spice goes lovely on the potatoes with lamb! But the choice is yours, I love the steak shaker, it's got garlic blackpepper and lots of yummy things in it. Sprinkle lightly over both sides of the wedges and bake in the oven til crispy about 20-30 mins, turning once. Enjoy!
PS - If you find a nice spice mix let us know! I've even used BBQ spice mix - yummy with burgers and sausages
