molly,...jacket potatoes ARE nutritious. They are full of vitamin C and fibre amongst other things. Fill with that old stand-by ,beans,...or make a chilli from soya or Quorn mince and fill the potatoes. Top with veggie cheese.Or serve with rice. Have a go at Indian vegetarian cooking.....lots of flavour and very colourful. Or almost any pasta dish,using corn pasta and non-meat sauces.
