What can I use for the garlic butter inside of chicken kievs if I don't like butter?

I've been wanting to make my own chicken kievs as I don't like butter/marg or any of the dairy substitutes. What can I use to clump the garlic together if I can't use butter/marg? If I used oil, it doesn't harden for me to shove inside the chicken. Don't really want to use lard as I don't want my arteries hardening. If only there were some sort of oil based thing that I can use instead of butter. Any suggestions anyone?

What's coconut butter? I've never heard of that one. Actually, I just thought, I'm ok with coconut milk so is it ok to freeze coconut milk? Maybe that's what you mean Answerprancer?

Thanks everyone for your suggestions. I'll probably go with the stock cube and coconut one as I don't touch the dairy substitutes either, so soya milk based stuff are also out (I know, I'm fussy but it's also a medical issue!). I appreciate the whole point of chicken kiev is the melting garlic butter but I would be ill if I ate the butter but that doesn't mean I don't like the smell of it. In fact, I love the smell of it and would love to have a go at my own version minus the butter. x
