what kind of bread do you use to make pannini sandwiches?

I worked in a sanwhich shop at university, and the paninis we used were an olive oil based dough, which helps with the browning not burning.

However, an ordinary baguette, partly cooked like you can buy in plastic packets in the supermarket also work well, but you need to spray on olive oil to stop sticking and to avoid burn.

We've had good luck with French baguette cut in half length wise.  Brush crustyside with olive oil and grill with fillings of your choice.  Also have used super crusty sourdough, which is my favorite...
