They also did crepes with rataouille; cheese; cheese & ham; cheese & tomato; cheese and chive; mushrooms in cream sauce; sliced roast duck with spring onions and plum sauce. Didn't have enough room to try them all !!
I'm pretty sure that any flatbread filling could be used on savoury pancakes instead.
A favourite in our house is Frankfurter Savoury Pancakes! Buy good German frankfurters, allow 2-3 per person, individually wrapped in pancakes (the frankfurters, not the persons) and pour a cheese sauce of your choice over the top. Bake in the oven to warm through and brown the top of the sauce. Delicious! They're very filling, but can be served with saute potatoes and a green vegetable such as broccoli or green beans.
Similar to purplefish's idea, spinach inside the pancake, topped with Danish blue cheese is nice.
Gravy from a roast dinner goes with pancakes and it's delicous. Pancakes are just flat Yorkshire puddings, aren't they? Don't knock it till you've tried it!
Basically, anything will go with pancakes. If you don't have a sweet tooth, then just use leftover savoury things instead of leftover sweet things
