I remember my mum making it with smoked haddock, hard boiled eggs and rice, with loads of butter on top. I'm sure there was more to it than this tho.

Does anybody still make it and any hints or tips would be welcome.

Ooh, I like kedgeree but you really do need some strong flavours in there to make it work well. I'm not too keen on the smoked salmon version, as (unless it's a really deeply oak-smoked salmon) the flavour just doesn't seem to power through the dish.

Smoked haddock seems to be 'standard' main ingredient (together, of course, with rice and eggs) but there are recipes with kippers, smoked salmon, smoked mackerel and other things as well. There are also curried versions. (While I like curry, that seems to be getting one strong flavour to compete with another, with neither of them really winning the battle well).

Love kippers and mackerel, smoked or otherwise. I seem to stick with the smoked haddock due to upbringing.

I don't think I'd be too keen on the curried versions. Personal preference I know, but a curry is a curry/

Rowan, I've got nutmeg and never even thought about it. You too are invited but I'm afraid it will be saffron-less x
I can bring some and some fresh flat leaf parsley forthe top...
This evokes memories as I confess I had never heard of kedgeree until I went to University at Durham. One of the attractions of the place was that the Debating Society had a breakfast bar whither all could repair if they had missed college breakfast and get a full fry-up for 40p (yes, it was that long ago). It was managed by an elderly lady of Geordie extraction who took no prisoners. One morning my mate and I decided we should go and have a Union fry-up. just as we were settling down to our meal a rather poncy-looking student walked in. He politely enquired whether she did a kedgeree, to which her response was, "Kedgeree, what the f**ks that? You can have bacon sausage and egg and if you don't like it, f**k off back down South"

Will now have to go and dig out the fish knives and forks.

I'll report back next week, local Fishmonger is rather tasty on a Friday morning.

Mmmmmm - made some a couple of weeks ago
I use a couple of different smoked fishes, chicken stock, hard boiled eggs, rice and this time I put some petit pois in it. I don't use saffron but put some tumeric in for colour. I can't stand curry powder so i don't use it
