I made a bit of an error when doing my online shopping, and now have lots and lots of fresh ginger.
Does anyone have any ideas on what I can do with it. TIA.

I use huge amounts - have it in Rooibos tea (redbush) - most stewed fruit recipes - stir fries- absolutely anything that needs a bit of a bite. I'm under correction here but think you can freeze it.

plant some in a pot in well drained soil and put on a warm windowsill. It is highly unlikely to flower but the tall stems with narrow leaves are quite attractive and in the sun they give of a slight scent of ginger. you need bit with buds on, sort of little pearly shiny areas on the bumps on the ginger

Make Ginger beer. I drink ginger beer every night, just a glass before bed time :-)
Yes it freezes great and you can grate it whilst still partially frozen, which means you can re-freeze it again
