If you want a change from rice, potatoes or pasta don't forget couscous. I made the following tonight;

Simple, quick, and it was very well received. It would have been best to have had a tube of harissa and some Moroccan red wine, I had neither, so I improvised with hot pepper sauce and paprika, accompanied by a bottle of Rioja.

For more on marking an answer as the "Best Answer", please visit our FAQ.I tend to use the packs of flavoured couscous (Jamie Oliver, et al), bought when they're on special offer. I find them handy for throwing a quick snack together.
e.g. a small can of pilchards in tomato sauce, mashed up in a little hot olive oil for a few minutes, goes well with couscous. (It's quite nice on its own but add half a jar of 'Value' pasta sauce, some freshly ground black pepper and a few spices to turn it into a really cheap pseudo-Moroccan dish).
