i have been asked to make a cake for a diabetic. has anyone got a recipe please. preferably not a carrot cake. no objections to carrots but her daughter made one when she down on a visit last month. will not be down again under school summer hols and as the lady is blind thought i would have a go for her.

But provided her diabetes is under control, she knows what she is eating and allows for it, there is no reason why she cant have "normal" cake if she likes it
My dad is diabetic and I make a regular cake but substitute the sugar for Xylitol. I get it from health food shops and my local Sainsburys sell it.

many thanks to both of you. am getting out the egg beater as we speak.
I agree with both answers, I am Insulin dependant diabetic and like cake.! Use any recipe you like just substitute sugar for sweetener according to the chart on the packets. I have found Splender works well ,but any granular low -cal sweetener from your local supermarket should work just as well. Diabetics do not have to have 'special' foods, they can eat the same as everyone else , only they need to have different portions according to their control. I particularly like mixed fruit cake with walnuts on top.

thanks to all of you. I was just not sure what sweetner could be used and if it would affect the texture of the cake. thanks for all the help.
