Im Looking To Make Some Pickled Red Cabbage, Any Good Recipes?

I dont really want the cabbage to go too soft, I like a bit of crunch, I dont really want to cook it or add anything that is fattening like olive oil etc

Ive found the above recipe on Youtube, it appears a bit basic but it may work fine, I'm tempted to try doing it this way but all the other recipe's suggest cooking it first, this involves butter etc so I dont really want to down that route.

Any more ideas?

Thanks Woofgang, I will try that, do you think the balsamic will add to it? I may try it both ways.
I am fairy sure that balsamic didn't exist in the Uk when she did it. She did used to do a sweeter batch and a more vinegary batch.

Ok, red cabbage pickled, will leave it until Monday before trying, if it turns out well I will be making lots more :-))
