Can you tell me whether I use the water that the quinces have been stewed in as well as the extract from the pulp or just the extract itself to make the jelly

about 4 pints of stewing juice and 2 pints of extract
thats's a lot of juice. I'd probably boil it to reduce it to two pints then use it as that will be where much of the pectin is
