Dead easy. There's a pound of mincemeat in it that makes a beautiful moist fruity cake. Keep testing the middle of it with a skewer before taking out of the oven finally as it's very moist with all the fruit content. http://allrecipes.co.uk/recipe/24613/easy-mincemeat-fruit-cake.aspx

The quickest Christmas cake I know of is to go to M & S and buy one. There now. Problem solved. As for the mincemeat ? Chuck it away, it's vile stuff. Oh well, I suppose it's a Marmite thing. Enjoy your cake Elina. xx
