I've been asked to make a dessert for Boxing Day dinner. We're out on Christmas Day and I'll have very little time before Christmas either! I've thought of Banoffee Pie because I can just make a quick biscuit base, buy the tins of caramel and put that, the bananas and cream on when we get where we're going on Boxing Day. Anyone got any other easy ideas though?
marks have got loads of tiny desserts on 4 for 3 at the moment. I can recommend the red velvet mini cupcakes, the gluten free popcorn squares, the white rocky road, the raspberry meringues and the millionaires shortbread :)
You can knock this up in 20 minutes or less..
Slice up a chocolate Swiss roll or any other chocolate cake, put in a trifle bowl.
Sprinkle a few tablespoons of Cointreau or other fruity liqueur over the cake, or fruit juice for an alcohol free pud.
Slice up a few bananas into some lemon juice to stop them going brown then tip them on top of the choc cake.
Put a good layer of desiccated coconut on top of bananas.
Tip a tin of custard over it all, I use best part of a large carton.
Whip up double cream and spread over the top.
Crumble up three large chocolate flakes and sprinkle over the cream.
Voila!
Another thought...
Google 'Iced Lemon Terrine', the one on the Woman & Home site. It takes 15 minutes to make, and freezes overnight. It's sooo nice, you could make it anytime you have the time and leave it sitting in the freezer till Boxing Day, mine is :)
