One of my favourite quick and easy 'cheat' meals ('cos it basically involves opening a can) is a jacket potato with chicken in a blue cheese sauce:
Empty half a can of chicken in white sauce (available in 'discount' stores for £1) into a saucepan. Heat gently while adding a little milk (to thin it down a bit) and crumbling some Stilton cheese into it. Delicious!
(I've no idea whether either the canned chicken or Stilton cheese can be found in Greece but perhaps you could tweak the suggestion to use local ingredients?)
