Tomato Based Sauce For Meatballs.

I've made meatballs with turkey mince and fresh herbs etc - little ones. What recipe do you use for a really tasty tomato sauce to go with your meatballs? Anything slightly different that you add to give it a lift?

Garlic, chilli, basil,pepper.....4 good sized onions and tins of toms and tomato puree --- whizzed together....and cooled and reheated.....probably the same as most peoples....little, if any, salt. Really thick sauce.

Lots of fresh herbs and a bay leaf are essential.

Drink the wine whilst cooking the meatballs....

I use a supermarket pasta sauce and add Marmite and Worcester sauce.

I like the mild flavour of paprika in tomato sauces...gives a nice "goulashy" taste...and caraway seeds if you like them.

Some white wine and a stock cube.

I'd go with some slowly cooked, caramelised onions to begin. Add a a little chilli flakes, garlic, bay and thyme. Then toms, maybe some purée too. Season to taste and add fresh herbs according to taste.

It is a very personal thing and depends on how you are wanting to serve. To my mind the onions are cructial!

I would add wine to the pan to deglaze after cooking the meatballs off.

Good idea Mally lol. Ok it's made and is absolutely delish. Will leave it all afternoon as the flavour should intensify a bit and then add the meatballs tonight! Thanks everyone.

I'd add some finely minced sun-dried tomatoes...the ones in oil. I put them in the meatballs also.

Bit late coming to this thread but ......!

Just mix a jar of Pesto, with a can of chopped tomatoes. Very tasty and not expensive....you can add some chilli flakes if you are brave enough !
