We do them quite a lot ... We have tried freezing them, but they are not as nice as the freshly made ones ... so we do fresh every time. They have such a high water content, they become a bit mush when re-heated.
Infact tommorow nights dinner is courgette fritters and salad.. cant wait.
Cant give then away at moment as I have so many, they really are prolific once they get going. Definitely an under estimated vegetable.
When I make courgette fitters I squeeze the moisture out using a heavy duty potato ricer. This is great at removing moisture and any left overs freeze quite well. If I get to freezer overload I defrost them and they go in lentil and vegetable soup.
Thanks both. Yes there's a glut this year for sure. I've made fritters before but wasn't sure about freezing. I made a soup with a yellow one yesterday, which had been hiding from me and was huge! Bit of bacon, onions, couple of spuds, some peas and beans all from the garden (except the bacon). It's lovely.
