I've tried tome fudge many times, many diff recipes - never got it right.

The fudge im after is the "crumbly" textured sort. Not the chewier soft one thats more common.

It's South African type fudge or Scottish "tablet" type fudge.

Any EASY foolproof recipes that you have already tried and succeeded at?

Fudge is different from toffee.

Here's a microwave recipe - with variations

1lb caster sugar (or soft light brown sugar)

2oz butter

1 tin condensed milk

Microwave for 3 mins

Microwave 6-7mins (900w), stirring when it boils up. (I find that brown sugar version doesn't boil up as high and only takes 6 mins)

Beat for 2 mins and pour (options before beating: add vanilla essence to the caster sugar version, or add white chocolate to the brown sugar version)

My mum used to make tablet, had a look but can't find the recipe

Back in the Sixties she would always make some for the school jumble sale and pour it into the square lid of a tin of sweeties.

After it cooled a wee bit she would score it to make rectangular portions. Later she would break them into portions and wrap them in greaseproof paper.

I would take them to school and they were selt for 3d each.

Corby what a. lovely memory. Yeah when I was in school we'd have cake sale days - each class would take a turn to host a sale day....which involved the mums making something yummy. I think my mum used to to oat flapjacks (oat-crunchies we called em in SA)
My mam made the best toffee(tablet)in Scotland.She always had to make three or four batches though.Me and my brithers used to discover where she hid it(usually in a corner of the press)and scoffed it before she could put it down to the local chapels sale of work.
It is a long time since I had Tablet but I always remember it as being warm and very sweet. Possibly because I was always hanging around the oven when it came out. Would there have been many calories in all that caster sugar and butter .. who cares !
One way to discover if it is real Scottish toffee(tablet),if it melts in your mouth in a crumbly sort of way it is the genuine article.If it is soft and sludgy it aint.

Tablet is 3 ingredient, caster sugar, butter and condensed milk, melt the butter and add the sugar melt again then add the condensed milk bring to the boil then turn down to a quick simmer stirring constantly for 20 minutes. Then give it a good fast beating for 5 minutes.
Place in a greased tin or dish chill but before totally set mark into squares return to fridge to finish setting
Fudge & toffee are nothing like tablet at all!!!

I will find a recipie for you- tablet takes about 30min or more of continual beating and uses a whole bag of sugar...... literally melts your teeth but i LOVE IT xx
Also tablet must not be made with vanilla, that is not traditional and soooo wrong
