Hi Chazza -
I live alone too and this is a quick creamy chicken/turkey soup I make sometimes.
A can of Campbell's Cream of Chicken Soup - add chopped or torn leftover chicken or turkey - rosemary to taste - I like to put some frozen green peas in mine - but you might like frozen mixed vegetables or whatever your fav is. Heat it thru in the microwave or a saucepan and you have dinner!!!
Hi Again Chazza -
If you want to use stock cubes instead of Campbell's Cream of Chicken Soup - dissolve the cubes in milk or water and use a roux to thicken it (equal parts of butter and flour mixed together to form a paste) - it has to come to a boil before it reaches maximum thickening so doing a small amount at first is usually best - add chopped or torn leftover chicken or turkey - rosemary to taste - I like to put some frozen green peas in mine - but you might like frozen mixed vegetables or whatever your fav is.
Hi chazza,
you could take a look at UKTVFOOD.CO.UK
to find an easy and quick recipe
Even if you live on your own couldn't you cook a small chicken, eat some for one meal, then either use the remains for another meal or freeze them and also make a soup?
