weetabix
does anyone have a cake recipe using weetabix my mum had one years ago it had lemon icing on top think it was from the weetabixs packet.thanxs in advance.

2 Weetabix
6 ounce Sugar
6 ounce Sultanas
8 ounce Self-Raising Flour
8 fluid ounce Milk
1. crush the weetabix into fine crumbs 2. add sugar, fruit and flour 3. add milk and mix well 4. Pour into greased lined loaf tin 5. Bake at Gas Mark 4 / 350F for 60 to 70 minutes 6. Cool for 10 minutes 7. When cold store in an airtight tin.

I gor a recipe for this off AB last year, the ingriedients were the same as above but with an added egg.
Method:
Soak the weetabix, sultanas, sugar and milk in a bowl in the fridge overnight.
Then add 1 beaten egg to the mixture and mix thoroughly.
Add the flour and a pinch of salt and again mix thoroughly.
Bake in the oven 180 oC for 3/4 of an hour.
I have baked this cake numerous times and it always taste delicious!!
