caesar salad - 2 questions.

What is the best way to cook the chicken for use in a caesar salad?
Also, my sauce is often not as smooth as I would like.
Any suggestions on how to make a nice, smooth (garlic-free) caesar salad dressing?

I cut the chicken into strips and quickly stir fry as for the sauce I always cheat and buy a bottle lol!
