Waldorf salad

I need to make a Waldorf salad for a buffet on Saturday. All the recipes I've looked at don't look very exciting. Has anyone got ideas to make the thing more interesting. It doesn't matter if the ingredients are not quite correct as long as the main ones are there. TIA.

My version.

Celery
White cabbage
raw parsnip (very finely cut)
Walnuts
Raisins (soaked to make them as plump as a welsh man)
lemon juice (just a drop)
caster sugar (just a little)
Crispy apple
Single cream
Fromage fraise.

)better than mayo, which makes it tastes cheap I find)
Golda's Frozen Waldorf Salad

1/2 cup sugar
1/2 cup pineapple juice
1/4 cup fresh lemon juice
1/8 teaspoon salt
1 1/3 cups heavy cream
1/2 cup miniature marshmallows
1/2 cup red seedless grapes, cut in 1/2
1/2 cup crushed pineapple, drained
2 medium apples, diced, skins left on
1/2 cup diced celery
1/2 cup walnuts or pecans, roughly chopped
8 fresh or maraschino cherries
8 sprigs fresh mint leaves

In a saucepan, combine the sugar, pineapple juice, lemon juice, and salt over medium heat, stirring constantly, until thick. Remove from heat and let cool. Whip cream and fold it into the cooled syrup mixture. Stir in marshmallows, grapes, pineapple, apples, celery and nuts. Spread mixture into an 8 by 8-inch pan and freeze until frozen throughout, at least 2 hours. Remove the salad from the freezer 5 minutes before serving. Cut into 8 squares. Garnish each serving with a cherry and a sprig of fresh mint.
WALDORF SALAD WITH CRANBERRIES AND PECANS IN RADICCHIO CUPS

This updated classic adds dashes of red � and depth of flavor � to the usual apple, celery, and walnut mix. Make the salad ahead and refrigerate, then add the watercress and pecans right before serving.

1 cup mayonnaise
1 teaspoon grated lemon peel
1 teaspoon fresh lemon juice
6 Granny Smith apples (about 2 1/2 pounds), unpeeled, cored, cut into 1/2-inch pieces
1 1/2 cups chopped celery
1 1/2 cups chopped radishes
3/4 cup dried cranberries
1/2 cup finely chopped red onion
2 cups watercress leaves
1 1/2 cups pecans, toasted, chopped
2 heads of radicchio, leaves separated

Mix mayonnaise, lemon peel, and fresh lemon juice in medium bowl to blend. Season to taste with salt and pepper. Refrigerate 15 minutes.
Toss apples, celery, radishes, cranberries, and red onion in large bowl. Add lemon mayonnaise and toss to coat. (Can be prepared up to 8 hours ahead. Cover and refrigerate.)
Fold watercress and pecans into salad. Arrange 2 radicchio leaves on each plate. Spoon salad into center of radicchio leaves and serve.

Makes 8 to 10 servings.

2 Ginger Gold apples (Fuji will substitute)
1 Red Delicious apple
3 tablespoons cider vinegar
1 cup prepared mayonnaise
1 pinch kosher salt
Cracked black pepper
3/4 cup toasted walnuts, crushed
1 cup golden raisins
2 teaspoons curry powder
2 stalks celery, thin bias cut
1/3 cup fresh mint, chiffonade
1/2 red onion, julienned
1 head romaine lettuce, heart only

Cut apples in half and remove the core with a melon baller. Chop apples into medium-sized pieces, leaving skin on.
In a bowl, toss apples with the cider vinegar. Fold in mayonnaise thoroughly. Season with salt and pepper to taste. Fold in walnuts, raisins, curry powder, celery, mint and red onion. Adjust seasoning. Refrigerate for at least 1 hour to allow flavors to incorporate. To serve, arrange 2 leaves of romaine lettuce per plate and spoon salad on top.
