Option off the Astry site for Moroccan recipes:
1 large Onion,; finely chopped
6 Garlic cloves,; peeled and finely chopped
� cup Finely-chopped red bell pepper; (optional)
2 teaspoon Finely-chopped jalapeno pepper
6 tablespoon Finely-chopped fresh cilantro
� cup Finely-chopped fresh parsley
Juice of 3 lemons, strained
Grated peel (no white attached) of 2 lemons
Grated peel (no white attached) of 2 oranges
1 teaspoon Turmeric
2 teaspoon Saffron
1 teaspoon Ground coriander
1 teaspoon Paprika
1 teaspoon Ground cinnamon
2 teaspoon Cumin seeds
Salt and freshly-ground black pepper
Combine and marinade the meat - leave as long as possible for best flavour.
This is a dry marinade - add olive oil for a wet version. To fruit it up, add orange segments, lemon slices or add apricots when cooking, and if in couscous or a tagine, use sultanas too and include olives and toasted almond slices in the dish as well - both tradtional ingredients.
