thinly sliced firm tomatoes arranged in a flat plate, thinly slice some red onions and throw them on, either whole or halved olives (stuffed are nice) some thinly sliced cheese (I like chedder, not very italian I know! but use what you like) thrown on, finished off with a drizzle of extra virgin olive oil, freshly ground pepper & some rock salt to top it off - very yum.
How about some salad leaves in a bag that contain rocket, that goes nice too.
I also do on sliced bread, softened margerine/butter, add some freshly crushed garlic, touch of salt, a little dried parsley - mix and spread some onto the sliced bread and grill until golden and eat with the lasagna/mop up juices.

A nice crunchy salad, maybe with home-made garlic croutons as an alternative to garlic bread. Lots of red onion for a kick, sweet tomatoes and a simple olive oil dressing with a little salt and pepper, cubes of cool cucumber/ celery and rocket for definite for a peppery mix, btw I loved Jack's ideas- thanks Jack!
