HELP ! I have offered to make pasta, rice , or similar for a cold buffet can anyone suggest some nice combinations , maybe something spicy. thanks

Just done a lovely big rice dish....egg fried special rice

As much rice as you want, boiled and drained
3 eggs
half a pepper finely chopped
half an onion finely chopped
Handful of peas
Handful of sweetcorn
Handful of prawns
Mushrooms finely chopped
3 garlic cloves finely chopped
few glugs of soy sauce
Chilli finely chopped depending on taste

Cook rice as normal and drain
Add drained rice to a wok with a little hot oil in
Crack the eggs over the rice and stir vigorously....it will set giving chunks of egg
Add garlic, mushrooms, peppers, onions, prawns, peas and sweetcorn. Add chilli and the soy sauce and stirfry until mixed well and cooked.

You can omit any of the above ingredients or add your own...finely sliced pineapple is nice or cooked chicken. A dash of lime juice or squirt of honey is nice too.

Nice for a saturday lunch time snack or as an accompaniment to a main dish.

This one's good for buffet... you may wish to double recipe:

Spicy Cold Pasta Salad

1 (8 oz.) pkg. rotini
8 oz. pepperoni, sliced thin
2 cups broccoli flowerets
1/2 cup chopped red or green pepper
1 (8 oz.) bottle Italian dressing (I use more)
1/2 cup sliced black olives
1 cup sliced mushrooms (we prefer thin sliced portabellas)

Cook rotini, drain and rinse with cold water. Combine in bowl, rotini, pepperoni, broccoli, pepper, olives and mushrooms. Add dressing and toss. I use 1 (8 oz.) bottle and half of another for dressing. Cover and chill in refrigerator...
How about coronation chicken?
How about couscous with diced carrots/ peas/sweetcorn mixed in..yum
My mum always does cold rice with peas and chopped up tinned mandarin oranges in.
A mixed pasta salad is good too.

Cooked and drained pasta

peppers, onions, mushrooms, fresh tomatoes (seeds removed), peas, sweetcorn, pineapple
All roughly chopped (except peas and SC)..mushrooms are cooked in microwave for a few mins.
A good few cloves of garlis and a very good sprinkling of dried oregano.

Mix together and add as much or as little mayonaise as you want and coat everything in it. You could add a few tins of tuna if you want.

Stir cooked, cold rice into diced celery, red onion, peppers, sweetcorn, cucumber coriander or mint. Add a chug of chilli sauce, crumble in a veg stock cube and stir in enough olive oil to coat. Stir in cashew nuts or peanuts.
An easy, but tasty and quite spicy one is curried peach salad. Basically it's:

A tin of peaches, drained and chopped into cubes
A tin of sweetcorn drained
A couple of handfuls of raisins
Curry powder
Mayonnaise
A couple of handfuls of salted peanuts

We usually just experiment with the amounts, bung everything in a bowl and stir it up, and you can make it as spicy or mild as you like by the type of curry powder you use.

For a pasta salad, mix the cooked pasta with chopped spring onion, chopped or grated cheese, chopped red pepper and whatever salad dressing you like best (we use french and it's lovely!) and put some ground black pepper in too.
