Left-over New Potatoes

I'm doing some spicy minced beef with peppers and tomatoes and I could do some pasta or rice with it, but I've got some cooked new potatoes left over from yesterday evening. Anyone got any suggestions please?

Slice them thinly (about 5mm) dry them thoroughly and sautee them in (olive) oil with some garlic.

well i suppose its too late now, but you coulda bashed them about in a saucepan (lid on and give a hefty shake), dust with flour and then roast them in a bit of oil in a high oven to crisp the edges.
Personally, I would have chopped them up and slung them in the mince - I must be a lazy cow!!!!
I either mix them with mayo, onion and sweetcorn to make potato salad, or else make spanish omelette:
Chop the potato up, chop up an onion and put them in a deep frying pan.
When the potatoes are warm and the onion has started to soften add some beaten eggs and some frozen peas (you could also use sweetcorn or any ingredients you have left over) and cook it until it's set!
