I have just decanted my first attempt at Damson Gin, which is a great success. However I am left with half a bottle of tiddly damsons, too strong to eat as they are (I tried one) but it seems a shame to throw them away. All ideas for using them will be gratefully received. Mairzeydotes
Get a bottle of cheap red wine & pour it over the damsons. Keep them in the original jar you made the gin in and leave to steep for a few weeks. You'll get a lovely, fortified wine. What to do with the damsons after that .. who cares, just drink the wine!!!
Seriously, though, you could turn them into a nice compote to serve with ice-cream.
