This one is easy to duplicate or expand for large partys:
Ingredients :
Rotini pasta 1 8 oz Packet.
Oil 2 Tbsp.
Garlic Cloves 1 whole, minced.
Eggplant small 1 diced.
Olives Chopped 1/2 Cup.
Corn 1 Cup.
Salt & Red pepper flakes To Taste.
Method :
Cook Rotini according to Packet direction.Drain
& set aside. Heat oil in a skillet, Saute garlic,
add eggplant & cook till browned.
Add corn,olives,salt,pepperflakes.Cover &
cook till corn is tender.
Toss in Pasta & serve immedietly or at room
temperature. (We mix in about 1/4 cup good Balsamic vinegar for additional flavor. Your choice).
