I use Delia's fruit cake recipe, I soak the fruit for 24 hours in Brandy before using and I do feed the cake with more brandy whilst it's in the tin.

I make my own marzipan and add Ameretto or brandy.

Christmas cake
3 Ib- 4oz mixed fruit
Rind of 1 lemon
Rind of 2 oranges and juice
2 tblsp 0f Brandy
9oz plain flour
1 tsp mixed spice
1 tsp cinnamon
7oz butter
7oz soft brown sugar
2 tbsps black treacle
4 eggs size 3 (beaten)
In a large bowl mix together the mixed fruit grated orange and lemon and orange juice, spoon the brandy over and mix well. Cover and leave for 2 hrs or over night is better. Sieve together the flour and spices, in another bowl cream butter , sugar and black treacle until nice and creamy, beat in the eggs one at a time adding a little of the flour & spices with each addition. Fold in remaining flour and spices ,fold in fruit mixture and mix well. Spoon into a greased and lined 8" round or square tin and make a slight indentation in the centre of mixture. Bake on gas mark 2 for 2 1/2 - 3 hrs or until a skewer put through the centre of cake comes out clean.
Decorate with marzipan and royal icing using apricot jam to coat the cake before putting on the marzipan.
