Oats pancakes
Hi! I am extremely proud of myself after making a recipe my mum gave me. It's basically little pancakes made with oats, milk, eggs and onion. Served with a tomato sauce, it's gorgeous and really cheap to make too.
I thought I'd share (hope it's not something everyone knows..lol)
250g oats (I used the Tesco value ones)
3 small eggs
About half a pint of milk
One onion, chopped
Salt, pepper, herbs to taste
Mix everything in a ball until you get a paste, quite liquid. Set aside to let the oats absorb some of the liquid (about half an hour).
Make the tomato sauce in the meantime!
Heat some oil in a non-stick pan, not too hot.
Test the heat by dropping a bit of the mixture in it: if it starts bubbling, it's ok.
Drop a spoonful of the mixture in the pan to make a small pancake (about the size of a cookie).
Repeat until you run out of space in the pan...lol
The first ones should take a few minutes to cook on one side. Turn them over when golden brown, and cook further.
The last ones will take a lot less time to cook as the pan is so hot by then.
Place on a kitchen towel to absorb some of the oil.
Serve hot with your tomato sauce. :O)
