You could use it to make a savoury jalousie - Roll out a large rectangle of puff pastry and then add a layer of sausagemeat, allowing about half an inch all round, then top with sweet pickle and slices of hard boiled egg.
Finish off by topping with another layer of pastry, seal around the edges and make slits across the top then brush with beaten egg and bake at about 180 degrees until golden - nice sliced and served with salad or a tasty alternative to sausage rolls
Yesterday I bought a lb of sausagemeat and with half I rolled it in seasoned flour and made sausages for toad in the hole, which we like with onion mixed in.
The other half I made into rolls of sausages and wrapped streaky bacon round each and then froze, ready for 25th with the turkey.
But I shall try the jalousie pie thingy - sounds good.
Maybe a bit old hat, but I always enjoy sausage meat with a finely diced onion,dried sage(or mixed herbs) and a finely diced Bramley apple mixed together and packed into a 1lb loaf tin and baked approx 40 min at gas 4. Turn out and eat hot sliced with seasonal veg(sprouts etc.) and spuds. Or cold with salad next day
