Since Rollo asked my first response, try this after you've successfully dried the tomatoes, here's a good recipe for their use:
Pasta with Sun-Dried Tomato Pesto and Feta Cheese
Ingredients
1 (9-ounce) package refrigerated fresh linguine
3 tablespoons any good Italian salad dressing
3/4 cup sun-dried tomato halves, About 4 to 6 ounces
1/4 cup loosely packed fresh basil leaves
2 tablespoons slivered almonds
2 tablespoons preshredded fresh Parmesan cheese
1 tablespoon bottled minced garlic or two cloves fresh garlic, thinly sliced and diced
1/2 teaspoon salt (Seasalt, of course)
1/4 teaspoon black pepper freshly ground
1/2 cup (2 ounces) crumbled feta cheese
Preparation
Cook pasta according to the package directions. Drain through a sieve over a bowl, reserving 1 cup cooking liquid. Return pasta to pan.
While pasta cooks, place tomatoes and next ingredients (through black pepper) in a food processor; process until finely chopped but not pureed.
Combine tomato mixture and the reserved 1 cup cooking liquid, stirring with a whisk. Add to pasta; toss well to coat. Sprinkle with feta.

we dry ours on top of the aga on a frame we made with muslin stretched over it. I know, it only works if you have an aga or similar! Then we pack them in olive oil and store them in jars with basil or garlic or chillies. Blitz them with some of the oil to make a fantastic dip. Add Creme fraish or similar to make a really tasty sauce for pasta.
