Delias braised red cabbage

On Delias christmas show last week she did braised red cabbage which I fancy making but she didn't give quantities. The ingredients were :- red cabbage, chopped onion, garlic, diced apple, dark brown sugar, cinnamon, nutmeg, ground cloves and vinegar. Does anyone know how much of each to use and also do I use a cooking apple or an eating one (also what type is best as I don't really like eating apples so don't know the difference), what type of vinegar - white or malt? Thanks to anyone who can help. Kath. :- D

1/2 small red cabbage sliced
! onion finely sliced
1/2 Bramley Apple - peel core and cut into wedges
!/2 eating apple (Cox/ Braeburn or similar) ditto
2 cloves garlic crushed and chopped
6 cloves
I chicken stock cube in small quantity of hot water
1 glass white wine or Cider
Olive oil
Seasoning
Heat the oil in a large pan and add the onion and garlic and fry lightly until soft. Add the red cabbage and stir fry unitl coated with oil and add the apples and cloves. Stir fry for about five minutes and then add the
liquids. Allow to simmer for about 20 minutes.
We then add a sliced German Sausage (Matthesons is good) and continue cooking whilst you cook some creamy mashed potato. (around 20 minutes), When all is ready serve.

The exact quantities aren't too important so long as you have enough liquid for it to stew properly.
Vinegar should be wine vinegar for a smoother taste.
If you use eating apples they will stay as apple pieces. If you use cooking apples they will mush down and giove the taste but no texture. So it's really your preference.
