all bran cake
have this afternoon made an all bran cake, as recommended by NoMercy.
i tweaked the recipe a bit and allowed the all bran to soak for 10 mins in the milk while i measured out the other ingredients:
1 cup sr flour and 1 cup wholemeal flour
2 cups all bran
1 cup sugar (i felt 2 cups was a lot of sugar in an otherwise very healthy cake)
2 cups dried fruit and 1 cup chopped nuts
2 cups milk
2 tsp mixed spice
this mixture made two good sized loaf cakes, and they are totally delicious. they took 10 minutes to make, and i baked them at 170o (fan oven) for exactly 55 minutes.
