Christmas Pud Blondies
Great recipe for that stodgy leftover xmas pud that haunts you on Boxing day.
Preheat the oven to 180°C, fan 160°C, gas mk 4.
In a microwave, melt 150g unsalted butter with 200g chopped white chocolate.
Cool slightly.
Whisk 3 eggs with 150g caster sugar and 1 teaspoon vanilla essence, then whisk into the chocolate.
Stir in 125g plain flour and 150g leftover xmas pud.
Pour into a 20x20cm lined tin.
Bake for 30 mins.
When cool, cut into squares.
