Chicken recipe

I am making a dinner for some quite fussy eaters, and don't know what to make! I have chicken and would like to chop it up and do it in some kind of a sauce, to serve with either potatoes or bread. They're not keen on anything spicy or curry in flavour. I want something relatively impressive so don't want to use condensed soup or anything like that
Do any of you have any recipes that you have tried that are nice? I know I could google for something but was wondering if anyone could recommend one personally.

Make a nice well seasoned white sauce, chuck in a few cooked frozen peas for a bit of colour and stir into your chunks of chicken and if you have some cooked ham left over add some of that too.Then if you are near a supermarket go and buy frozen puff pastry sheets and make a pie brushing the top with beaten egg to make a nice glaze and cook it at the time you need to serve it,If not make a mash potato topping instead. My Family love my pie and it is so simple .
Mu husband and I are fussy eaters too but this meal is tasty and looks good too.
Quick creamy boozy chicken (serves 4)
2 tbsp olive oil
1/2 red onion
4 chicken breasts, halved
2 cloves garlic, crushed
250ml dry cider
packet trimmed green beans (minimum 150g)
100ml double cream
150g frozen peas
1/2 lemon (or bottled lemon juice)
new potatoes, boiled or steamed, as accompaniment
1. Heat the oil in a large saute pan and fry the garlic and onion gently for a few minutes to soften.
2. Add the chicken pieces and brown them for 3-4 minutes on each side.
3. Add the cider, bring to the boil then reduce heat and simmer for 5 minutes.
4. Add the green beans and cream and simmer for a further 4 minutes. Then add the peas and simmer for 2 more minutes.
5. Check if the chicken is cooked through and the veg is to your liking. If not, simmer for a couple more minutes.
6. Season well, squeeze over some lemon juice then serve with potatoes cooked to your liking (can also be served with rice if preferred)
