These recipes should be made with pigs fry which is a mixture of offal, heart, liver and kidneys and my father always said it should also have a portion of lights (lung) otherwise it did not taste the same. Sounds awful but was delicious. I should say that the last time I tried to buy fry, the butcher did not even know what I was talking about. It is very difficult to find a butcher who still sells it. Hope you get better luck than I did.
Why buy crap? Make your own. Sure a little time consuming butn what a difference from frozen, etc., stuff. How to make them? Well my grandmother, from Yorkshire taught me the following:

112 gr/1/4 lb ground beef, 225 gr/1/2 lb liver, 4 medium mushrooms, cut up, 1/2 tsp thyme (2 tsp if using fresh), 1/2 onion diced, pepper to taste
Method
Boil some water. Dip the liver into the boiling water for 5-10 seconds. Cut up the liver. Put all of the ingredients into a food processor and process until the mixture is smooth. They can be either placed into casings, or cooked as is. If cooked as is, heat a frying pan, add a little oil and spoon mixture into the pan. Flatten, about 1/2-1 cm/1/2”-1/2” and fry until brown on both sides.
