Here is a traditional Bolognese-similar to a recipe I've used for a number of years........No mushrooms....or brown sauce...or chilli paste.....and very delicious.

i've just made this for our evening meal. turkey mince, loads of carrots, 2 large onions, whole large carton of mushrooms, jar of dolmio, tin of tomatoes, one beef oxo and one green oxo, 6 tablespoons of worcertershire sauce, large slug of red wine, sprinkle of mixed herbs.
wasn't a traditional tomato-ish bolognaise but it was really, really tasty. i'd have put some chopped celery in too but i forgot i had it in the fridge.

I lightly fry finely chopped onions, add a couple of crushed garlic cloves, add the mince and brown it, add a spoon or two of flour, add a couple of jars of lloyd grossmans tomato and basil sauce, add in about 400mls of beef stock and a couple of finely grated carrots. Simmer for about half an hour before putting spag on (sainsburys spag is the best imo) Best spag bol ever!

I just fry onions until they soften (in olive oil) then I add the mince meat and loads of garlic and fry until brown. I add a bit of tomato puree and keep frying to bring out the colour and then I add red wine and reduce it down. I then add passatta or chopped tomatoes. Tinned tomatoes tend to have more flavour. I add beef stock cube origano, basil , salt and plenty of black pepper and simmer for about 1/2 hr or perhaps a bit longer until the tastes have all blended and it thickens enough to coat the spaghetti, but not be runny. That is it really. You can add other things and choose the amounts of stuff to suit your own taste. I personally don't like it with carrots in it, but I often throw spinach in it to add a bit more veggie stuff. Easy peasy!!
