Aioli

Aioli is a traditional French sauce made from olive oil, garlic and egg; it is a type of garlic mayonnaise. The Spanish also have a similar sauce called aioli but it is made without the eggs. Aioli is a wonderful dip and sauce, like hummus or pesto it can make a meal, serve aioli with olives or bread and you have a wonderful simple dish that tastes fantastic and is perfect for lunch.
Aioli is perfect with fish and ratatouille for a truly authentic Mediterranean meal. A delicious salad dressing or a wonderful dip to accompany tapas, crispy deep fried squid, patatas bravas and jamon croquettes are all perfect to dip in aioli.
Ingredients
- 5 garlic cloves, crushed
- 1 egg yolk
- 1 whole egg
- 250-300ml olive oil
- 1 tbsp lemon juice
- Pinch of salt and pepper
Method
- In a blender mix all the ingredients except the olive oil. While the motor is running slowly pour in the olive oil stop when it becomes thick like mayonnaise.
