Almond Cranberry Porridge

Porridge is a wonderful breakfast on a cold winter day; it is hot, comforting and very filling, exactly what is needed to make it to lunch. A little honey makes porridge deliciously sweet without adding to much sugar, and almonds add a nutty crunch while cranberries are slightly sour.

As well as being very tasty porridge is very nutritious, it is high in fibber, whole grain, high in iron and rich in vitamin E and B; wonderful food for a healthy life style. The cranberries and nuts are also perfect for a balanced diet, the cranberries are one of your five a day and almonds contain protein. Milk in the porridge is a great source of calcium but if you want a lower calorie option use water instead. The other wonderful thing about porridge is, it is very cheap and quick, perfect for a busy family and a hectic lifestyle.

Ingredients

  • 150g rolled oats
  • 600ml milk
  • 2 tbsp honey
  • 8 tbsp dried cranberries
  • 50g toasted almonds

Method

  1. In a saucepan boil the milk, and then stir in the oat and 1 tbsp honey.
  2. Simmer gently for a few minutes, once it is cooked serve with toasted almonds, cranberries and drizzle some honey on top.
