Amaretti Biscuits

Amaretti are small almond flavoured Italian biscuits, they are crunchy on the outside with a chewy moist centre. Perfect to serve with coffee as a naughty little tea time treat or an after dinner nibble, that will impress your guests.

Amarettis go wonderfully with ice cream particularly coffee ice cream or a very luxurious, rich chocolate and vanilla ice cream with toffee sauces to make a magnificent Sunday.  Ice cream cookie sandwich are always a good idea, which is far too naughty for children. Make a delicious butter cream filling and sandwich between two amoretti biscuits for a tasty sweet snack or a beautiful, delicious gift. Amaretti are very versatile, a wonderful little snack, that you and your children will enjoy or a wonderful gift and a magnificent quick, easy, desert for an elegant dinner party.

Ingredients

  • 250g ground almond
  • 205g caster sugar
  • 2 egg whites
  • ½ tbsp amaretto liquor or vanilla essence
  • 20 red glace cherries, halved

Method

  1. Line a baking sheet with grease proof paper.
  2. Mix all the ingredients together except the cherries.
  3. Place a teaspoon full heap onto the baking sheet.
  4. Press the cherry in the top.
  5. Preheat oven to 170°C and bake for about 15 minutes until golden.
  6. Set aside to cool.
