Ameijoas A Bulhao Pato, Portuguese Clams

This is a wonderful traditional clam recipe, popular all over Portugal. Bulhao Pato was a Portuguese poet who is attributed with creating this dish. The dish is similar to mussels cooked in a white wine or garlic sauce, like mussels, you have a massive bowl piled high, with a light, fragrant garlic sauce.

This is a perfect dish for anyone who loves seafood. Serve with homemade crusty bread and you have a wonderful lunch or dinner. Like mussels, clams are served in their shells so they are great fun to eat and they look fantastic.

Ingredients

  • 1 kilo of clams, cleaned and beards removed
  • 150ml water
  • 75ml white wine
  • 2 tbsp olive oil
  • 4 cloves garlic, sliced
  • 1 bunch coriander
  • 1 large lemon
  • Salt and pepper

Method

  1. In a pan heat the olive oil and fry the garlic. Add the wine, water and coriander.
  2. Then add the cleaned clams, cover the pan and simmer until the clams all open, this should take about 5 minutes.
  3. Squeeze the lemon juice over the clams and season with salt and pepper.
