Apricot And Raisin Flapjack (dessert)

Flapjacks are wonderfully easy to make. They are sweet and tasty, packed full of fruit. Apricot and raisin flapjacks are a great snack for kids during play time and a great way of getting fussy eaters to try some fruit. They are filling, full of fibre, and because they are homemade, you get the benefit of knowing exactly what you and your family are eating.


Ingredients        

  •     60g soft brown sugar
  •     180g rolled oats
  •     60g raisins
  •     60g dried apricots, chopped
  •     120g golden syrup
  •     110g unsalted butter, a bit extra for greasing

   
 Method

  1. Grease an 18cm or 7 inch shallow square tin.
  2. Pre-heat oven to 180C or gas mark 4.
  3. Melt the butter and golden syrup together in a pan.
  4. Stir in the oats, raisins and apricots. Mix well then spread evenly in the greased tin. Bake for 30 minutes.
  5. Cut into slices and leave to cool.
