Butterscotch Mousse

A soft creamy mouse served cold, perfect for a little treat, on a hot summer day that you and your children will love. Or a fabulous dessert to end a sophisticated dinner party. This butterscotch mousse has a little coffee to add a little extra flavour, it is simple and elegant but tastes fantastic. Coffee smells wonderful and goes beautifully with lots of cream and anything sweet so it is a perfect ingredient in a mousse, particularly a butterscotch mousse which is made mainly with brown sugar and is definantly perfect for anybody with a sweet tooth.

Ingredients

•    1 large egg, lightly beaten
•    150g brown sugar
•    235ml whipped cream
•    3 tbsp butter
•    3 tbsp water
•    1 tbsp of instant coffee granules

Method

1.    In a saucepan, combine the brown sugar, butter, coffee granules and water.
2.    Cook over a low heat until the butter and sugar have melted.
3.    Add the egg in and slowly stir.
4.    Cook for about one minute over a medium heat, stirring constantly.
5.    Remove from heat and allow to cool.
6.    Fold in the whipped cream.
7.    Cover and refrigerate.
