Chocolate Creme Brulee

Creme Brulee is a French dessert, mainly consisting of cream and lots of it. Creme brulee is seen on the dessert menus of many a luxury restaurant, offering some of the world’s finest foods. There is actually very little to crème brulee, it translates into burnt cream and that is pretty much what it is, it is also very delicious, especially chocolate creme brulee. The ingredients are simple, the recipe is easy and the very best thing about creme brulee is that you get to use a blow torch, but for those of us who are less excited by tools and fire or don’t have a blow torch you can still use a grill.


Creme brulee is a very pretty dessert that suits so many occasions, whether you are showing of your hosting skills and throwing a fabulous diner party, a romantic candle lit meal for two, or a special surprise treat to end a perfect picnic it is a delicious desert with a touch of grown up elegance and an abundance of luxury.

Ingredients

  • 80g caster sugar
  • 300ml double cream
  • 300ml milk
  • 4 egg yolks
  • 1 heaped tsp cornflour
  • 100g chocolate, at least 60% cocoa solids
  • 6 tsp icing sugar
  • 1 vanilla pod

Method

  1. Mix the egg yolk, caster sugar and cornflour together.
  2. Pour the milk, cream and add the vanilla pod in a medium sauce pan and gently bring to the boil. Remove the vanilla pod. Pour the cream mix into the egg mix and whisks continuously. Return to the pan  and heat gently stirring until thickened.
  3. Remove pan from heat and stir in chocolate pieces until they have melted. Pour the mix into six ramekins, leave to cool, and then place in the fridge for 2 hours.
  4. Sprinkle the tops with caster sugar, caramelise by using a blowtorch or placing under a hot pre-heated grill. Chill until ready to serve.
