Coconut Rice Pudding

A simple dairy free dessert that tastes great, so whether you are lactose intolerant or a vegan this is a great dessert to sit down and enjoy with your whole family.

Rice pudding is already very creamy, rich and comforting. Coconut milk makes rice pudding sweeter and even richer with a wonderful aromatic smell.

Ingredients

  • 120 ml coconut milk
  • 50g of cooked short grain rice
  • 25g caster sugar
  • 2 vanilla pods

Method

  1. Heat the coconut milk in a saucepan, add the sugar and stir well. Crack the vanilla pod open and empty the seeds in to the coconut milk. Add the vanilla pods, once the sugar has dissolved let it simmer and remove the pods.
  2. Add the cooked rice and heat through, simmer until the rice pudding has thickened.
