Crepes

Crepes are delicious thin French pancakes. These pancakes are very simple to make and are a great dessert. You can dress then up with different types of filling; a clotted cream, jam and fresh berry filling looks beautiful and is perfect for a dinner party, but there are so many other flavours.

A favourite filling sold throughout France is Nutella and bananas; chocolate spread and crepes is a perfect combination that children love, perfect for a fun dessert after a family meal. If you fancy a naughty lunch time treat or have a little extra time on a Sunday morning a simple classic crepe of lemon juice and sugar is yummy, the sharp, clean flavour of the lemon juice and sugar is perfect, simple and delicious.

Ingredients

  • 2 eggs
  • 240ml milk
  • 100g flour
  • 1 tbsp sugar
  • ¼ tsp salt
  • ¼ tsp vanilla extract
  • Butter for cooking

Method

  1. Whisk the eggs, then add the milk and vanilla extract, whisk until smooth.
  2. Sift in the flour then sift in the sugar and salt, beat until the batter is completely smooth.
  3. Cover the batter and refrigerate for 1 hour.
  4. Heat a little butter in a large saucepan over medium heat, and then pour 2 tbsp of batter in.
  5. Rotate pan so that the batter covers the bottom of the pan.
  6. Cook the pancake until lightly brown on the bottom side, check by using a spatula to lift the edge up for a look. Turnover and cook until other side is lightly brown.
