Filo Wrapped Asparagus

Tender asparagus wrapped in a crunchy flaky filo pastry makes a wonderful snack perfect for a party. Asparagus is a delicious luxurious vegetable and is particularly good in April, when it is first in season.

This recipe adds a touch of fun to an elegant vegetable, asparagus is already perfect finger food, a healthy snack, ideal for dipping. When wrapped in filo pastry it becomes a wonderful appetizer or an ideal dish for a buffet. Filo wrapped asparagus is delicious hot or cold, if serving cold you can prepare them the day before, great if you have lots of other party planning going on. If you are looking for something more interesting and sophisticated than the typical buffet of triangle sandwiches or sausage rolls, filo wrapped asparagus is perfect.

Filo wrapped asparagus is also a wonderful way of introducing children to new vegetables, the pastry adds a slight crunch and finger foods are far more fun to eat.

If you aren’t planning on having a buffet anytime soon filo wrapped asparagus works wonderfully, served warm as a starter, whether it is for a dinner party or a romantic meal for two.

Ingredients

  • 20 asparagus, trimmed
  • 5 sheets filo pastry
  • Olive oil
  • 1 tbsp sesame seeds

Method

  1. Cut the filo pastry into squares slightly shorter than the asparagus.
  2. Brush the pastry squares with olive oil and roll one asparagus in one square of pastry making sure the tips stick out.
  3. Brush olive oil on the outside, repeat with all the asparagus and then lay on a baking sheet and sprinkle sesame seeds on top.
  4. Bake for about  10 minutes until golden brown.
  5. Remove from the oven and serve warm with dip.
