French Silk Pie

This delicious creamy chocolaty pie is very luxurious. What makes this pie special is that the chocolate filling is so light and fluffy.

French silk pie is not actually French it is American and very popular in the south. This delicious American dessert is very easy to make and involves no cooking. Everything is whipped together layered up on a biscuit base then refrigerated, extremely easy.  If you don’t want to use a biscuit base you could use a pie shell, the tiny little bite size pre-made pie shells look very cute filled with French silk.

This is a fabulous dessert to end a delicious home cooked family meal with. A perfect family dessert, that they all can enjoy, anyone who loves chocolate will love French silk pie. If you use the little pie shells this recipe makes wonderful appetizers style dessert for any occasion or a perfect little extra treat to finish an elegant dinner party with.

Ingredients

For the biscuit base pie crust

  • 150g biscuits, I suggest Oreos
  • 95g butter, melted
  • 5 tbsp caster sugar

For the French silk

  • 115g butter, softened
  • 125g sugar
  • 165g plain chocolate, minimum 70% cocoa
  • 2 tsp pure vanilla
  • 2 large eggs
  • 125 ml double cream
  • 3 tbsp icing sugar

Method

For the biscuit base pie crust

  1. Mix all the base ingredients together, and firmly press into a 20cm pie dish.
  2. Refrigerate.

For the French silk

  1. Melt chocolate in a bowl over hot water, do not let the bowl touch the water.
  2. In a bowl cream the butter and sugar together, adding a little sugar at a time, until it is smooth.
  3. Gradually add the melted chocolate and beat until mixed.
  4. Add eggs one at a time, whisk until mixed.
  5. Spread into the pie crust and chill.
  6. Whip the double cream and icing sugar together.
  7. Top the pie with the whipped cream and chill.
